Since yesterday was MLK day, I decided to make some more cookies. You can never have too many cookies!
They make quite a lot. But that doesn't mean that they will last a long time! When I got home from school this afternoon, they were all gone. I suppose they are in the stomachs of some very happy people. :)
Chocolate Chocolate Cookies

{Makes 30 2 inch cookies}
Ingredients:
1 cup soft unsalted butter
1 1/4 cup sugar
2 large eggs
1/2 cups cocoa powder
2 1/4 cups flour
1/4 tsp. salt
1 tsp. baking powder
2 1/2 cups chocolate chips
Directions:
1. Preheat oven to 350 F. Line baking sheets with parchment paper.
2. In an electric mixer bowl, beat butter and sugar until light and fluffy. Beat in eggs one at a time.
3. Mix in cocoa powder until well blended. Add the flour, salt, and baking powder and beat until just incorporated.
4. Fold in chocolate chips, and transfer dough to wax paper to make sure everything is well incorporated.
5. Divide dough into 16 equal pieces, and then divide those in half. Bake for 14 minutes, and let cool on parchment paper 5 minutes, and transfer to wire rack.
