Dark Chocolate Sugar Cookies

Today I have an absolutely delightful recipe for you to feast your eyes on. They take practically no time to prepare, and the longest time is when it's chillin' in the fridge. Basically, this recipe is a piece of cake. And it tastes delicious too!

Dark Chocolate Sugar Cookies

{will make approximately 12 cookies}

3/4 cup flour
1/3 cup cocoa powder
pinch of salt
6 tbsp. unsalted butter
3/4 c powdered sugar
1 large egg
1/2 tsp. vanilla extract

1. In a small bowl combine the flour, cocoa powder, and salt. Whisk to blend and set aside.
2. In the bowl of an electric mixer, beat the butter and sugar together. Blend in the egg and vanilla.
3. With the mixer on low speed, add the dry ingredients and beat until just incorporated and no streaks remain. Form the dough into a disk, wrap tightly with plastic wrap, and refrigerate until firm (1 hour)
4. Preheat the oven to 350 degrees. Spray a baking sheet with non-stick cooking spray.
5. On a floured surface, roll the dough to about 1/4 inch thickness. Cut out desired shapes and place them on the baking sheet.
6. Bake 10-12 minutes, or until set. Let cool on the baking sheet for 5 minutes, and then transfer to a wire rack to cool completely.
7. Frost and enjoy!
